Peeping Tom 2018 Cabernet Sauvignon
"Bright and youthfully charming, the perfumed bouquet shows cassis, spiced cherry, thyme and roasted hazelnut characters, leading to a succulent palate that’s beautifully weighted and lingering. It’s flavoursome and silky, well supported by chalky tannins, finishing long and pleasingly dry. At its best: now to 2028." *93 points* - Sam Kim, Wine Orbit
2018 vintage was labelled an amazing vintage, with superb conditions and fruit of outstanding quality was harvested. A cold winter delivered good dormancy. The yields were moderate, and the slow cool ripening was very even, delivering fruit with fine tannins and strong varietal flavours. Grapes produced were of outstanding quality with good colour, balanced tannins and good fruit weight.
Our Cabernet Sauvignon is sourced from premium Coonawarra vineyards surrounding the winery.
Fruit was fermented to dryness on skins. Following pressing, clarification and blending, the wine was matured in French oak hogsheads for 12 months prior to bottling.
Try with a chorizo and pepperoni pizza, vegetarian lasagne, a slow cooked Ragu or even a paella.
Rich and powerful the wine displays vibrant red berry flavours with typical Coonawarra intensity. The round palate with lingering ripe red berry and subtle oak flavours will reward immediate enjoyment.
