The aroma has appealing white peach, nectarine aromas. Judicious use of oak imparts the wine with toasty notes and toffee/caramel aromas. The stone fruit flavours follow through to the palate with nice depth, whilst the robust flavours are tempered with refreshing acidity and the wine finishes with sweet oak characteristics.
The 2018 harvest progressed under ideal cool and dry conditions. Rainfall through the growing season was average with a dry summer, allowing fruit to attain optimal characters.
Sourced from selected Chardonnay vineyards located in the premium growing area of Limestone Coast.
The wine was picked very early morning and pressed off skins immediately, retaining the purity of the fruit. The juice was cold settled and fermented cool with high quality French oak. The wine was aged on lees for 6 months to gain complexity and texture.
Scallops, bacon, cream and potatoes all love Chardonnay.
