Paternus Cabernet Shiraz
This wine exhibits a beautifully deep crimson colour alongside plentiful aromas of blackcurrant, raspberry, and mulberry on the nose. The palate is bursting with ripe dark fruit such as plum and juicy blackberry, which are complemented by pepper spice and touches of cinnamon. The intense rich fruit flavours and elegant integrated oak provide a well-structured wine, with layers of silky tannins and persistent length to finish.
Coonawarra Cabernet Sauvignon, single vineyard, terra rossa soil, single cordon, low yielding, 10 days skin contact. McLaren Vale Shiraz - Blewitt Springs, sand over clay, small batch ferment, 15 days skin contact. Individually pressed to oak, 12 months maturation, blended, additional 6 months
oak maturation prior to bottling.

"The colour is a very dark maroon. The immediate aromas are of dried herbs, warm earth and then a sweet core of black cherries and chocolate. Full-flavoured and concentrated, the wine is impressively balanced. It really picks up on the palate. Good acidity runs the full length of the wine. It is certainly delicious now, but it needs time to really show its full glories. A serious wine, it has ten to twenty years ahead of it. Big, bold and impressive."
