Paternus Cabernet Shiraz

This wine exhibits a beautifully deep crimson colour alongside plentiful aromas of blackcurrant, raspberry, and mulberry on the nose. The palate is bursting with ripe dark fruit such as plum and juicy blackberry, which are complemented by pepper spice and touches of cinnamon. The intense rich fruit flavours and elegant integrated oak provide a well-structured wine, with layers of silky tannins and persistent length to finish.

Coonawarra Cabernet Sauvignon, single vineyard, terra rossa soil, single cordon, low yielding, 10 days skin contact. McLaren Vale Shiraz - Blewitt Springs, sand over clay, small batch ferment, 15 days skin contact. Individually pressed to oak, 12 months maturation, blended, additional 6 months
oak maturation prior to bottling.
